Well, the mashed potatoes, sweet potatoes and dressing are all done, decanted into foil pans and refrigerated, I have cut up the veggies for the turkey pan and made some compound butter to rub into him, and I have trimmed 3 pounds of green beans. I have also collected the turkey, which is HUGE, but I have figured out that it will fit in the fridge. I am sweaty and less than adorable at this point, but I still need to blanch the beans, toast the cashews and get the turkey brining before I take a shower and a nap. I’m debating on whether to make the pies today or tomorrow morning; they’d be fresher if I baked them tomorrow, but the flavors might meld better if they are baked today.
I am having waves of self-doubt; I believe that the dressing is bland and has too much bread, the mashed potatoes are too lumpy, and that I didn’t make enough cranberry sauce. Must. keep. moving.
